When water is added to cement, it creates an exothermic reaction. (Heat is released) The night after a pool is shot, you can climb in and feel the heat rising past you into the night-time sky. The next day, we continue to "Hydrate" the cement by watering it several times each day for the first week. This causes the cement to absorb additional water, the bonds between cement molecules extends to create stronger bonds. While typical decking concrete is about 3,000psi, shotcrete can gain strength up to 8,000psi with proper hydration. Hydration also reduces "Shrinkage" which is the cause of many concrete cracks.
